Heathcote Shiraz
Wine
Journey Wines Heathcote Shiraz is drawn from the Chalmers Vineyard at Colbinabbin near Heathcote in central Victoria.
The vineyard is situated on ancient red Cambrian soils interspersed with copper infused basalt, or greenstone. The close planted Shiraz vines are hand harvested early in the morning.
Most of the grapes are destemmed to open fermenters, with one quarter added as whole bunches. Fermentation is with wild yeasts. The cap of grape skins is gently hand plunging and pumped over once daily during the peak of fermentation.
After several weeks on skins, the wine is pressed and transferred to new and seasoned French oak barrels for malolactic fermentation. During 16 months of barrel ageing the wine is racked twice. It is bottled unfined.
Deep garnet, Journey Wines Heathcote Shiraz is a delicate style of Heathcote Shiraz, with juicy dark berry flavours and white pepper spice. Cellaring potential is 10 years.
